This recipe right here has become the base for just about every muffin recipe I make. A friend shared it with me years ago, and it's still the most requested recipe in our house. I have subbed something for just about every single ingredient, and they always turn out moist, delicious and absolutely perfect. Here's my perfect version after many years of making them.
3 large bananas, mashed 1/2 cup coconut palm sugar 1T ground flax + 3T water 1t baking soda 1t baking powder 1/2t pink Himalayan salt (1t if you use coconut oil) 1 1/2 cup gluten free flour blend* or oat flour or whole wheat flour 1/4 cup melted Earth Balance Vegan Buttery Spread or coconut oil 1/2 cup Enjoy Life chocolate chips |
*Erika's Gluten free flour blend (the best!) ingredients: Brown Rice Flour, White Rice Flour , Sweet Rice Flour, Tapioca Flour, Xanthan Gum.
