A few weeks ago I cooked a large batch of white beans in my Instant Pot and froze them in bags. Since then I've been pinning white bean recipes that look tasty, but guess what? I haven't tried to make a single one of them! I ended up thawing a bag and throwing this together based on having leftover chicken, a bag of thawed beans, and a huge pile of fresh herbs from our Tower Garden. Just my luck, it's a keeper!
Ingredients 1-2c cooked and chopped chicken (mine was from a leftover Instant Pot chicken!) 1 can white beans, or 16oz homemade 1/4 red onion, chopped 1T each fresh chopped basil and parsley 2t each fresh chopped rosemary and thyme 1T olive oil 1T red wine vinegar Juice and zest from one lemon 2t hemp seeds Optional: 1-2 drops Young Living lavender essential oil Salt & fresh cracked pepper to taste. |
