- 7 Minute Workout Apps (love them!!)
Each month Juice Plus+ has a new theme, and this month we are staying #activeinapril. We are making an effort to get the entire family out for some fresh air and exercise each day.
The 7 Minute Workouts have been easy to fit into our busy schedule, and I definitely feel sore the next day after a workout. Ideally I'd like to do more than one a day, but until my beautiful little mini me's stop waking me up at night, one is better than none!
Plus we are trying desperately to balance work, school and fun. For every assignment my boys complete, we have been rewarding ourselves with a fun activity together. This week we read books, made rubber band bracelets and built a fun fort for the baby to crawl in and out of. Even one of our furbabies got involved in the fun!
Next week we'll be working on turning some cardboard boxes into vintage suitcases for the Second Grade Musical. |
Instant Pot
A friend introduced me to the Instant Pot and I'm instantly addicted. I've been debating a pressure cooker for a while, and decided to finally grab one up off Amazon Prime. Just this week I cooked steel cut oats, perfect jasmine rice, turkey chili, coconut curry fish, two pounds each of dried black beans and large lima beans, stuffed bell peppers and brown rice. In minutes!!!!
Total hands on time was under three hours spread out over the week and we had enough food for breakfast, lunch and dinner every night. I can't wait to keep cooking in it. I'm already getting rid of the rice cooker I have for sure, and I'm debating if I still need a crock pot. that's how much I love this thing. I'm so excited to cook this week and save even more time!! Less dishes!! This is a game changer for sure. I followed the instructions in the cookbook that came with the Instant Pot, plus some of my own recipes. |
Instant Pot Recipes
Turkey Chili
1 turkey tenderloin, cut into pieces
2 cans Muir Glen Tomato Sauce
1 box Pomi Diced Tomatoes
2 cans beans of your choice (I used cannelini)
2t pink Himalayan salt
2t each, cumin, oregano and chili powder
1 onion, diced
4 garlic cloves, minced
2 bell peppers, diced
Optional: 1 jalapeno, minced or 1/2t crushed red pepper for spice (I left out for the kids)
Set the Instant Pot to Saute setting and add the turkey. Turn until brown on each sides and take out. add the onion, peppers and garlic, and all spices and saute 1-2 minutes until fragrant. Add the rest of the ingredients, snap the lid on and set it to the Bean/Chili setting. Let it natural pressure release and serve while hot. Add optional toppings like avocado, cheese, sour cream, fresh cilantro.
Stuffed Bell Peppers
1 lb ground turkey
1c brown rice, cooked
2t poultry seasoning
1t pink Himalayan salt
1/2t pepper
1 egg, beaten (or egg replacement)
1/2c water
2t onion powder
1t garlic powder
Optional: 1/4c Locatelli Pecorino Romano grated cheese
Mix all ingredients well. Cut the tops off your peppers, clean out the insides, then use a knife to gently slice the bottoms off so the peppers sit flat and insert the knife into each pepper point to make drain holes. Stuff with your mixture, place into the Instant Pot using the little wire rack in the bottom, and pour a large can of crushed tomatoes over the top and into the bottom of the IP. Put the lid on and press manual, set the timer for 12 minutes and you're off and cooking. Once it's done use the Natural Pressure release, count ten min, then let the rest of the steam out and serve hot with extra rice and sauce.

3 1/2 cups cooked beans 1 cup tahini 4 tablespoons freshly squeezed lemon juice 4 cloves garlic, crushed 1/3c ice cold water 1 1/2t pink Himalayan salt 1T fresh chopped chives 1/2c chopped parsley Good quality olive oil, to serve (optional) |
