The ingredients are things we usually have on hand, and now that we've picked our fresh Merrill oranges the kids are begging for pancakes and a glass of freshly squeezed juice. I wanted to get this up quickly, so I didn't take a bunch of pictures of the step by step, but you won't need them. It's that easy! This time we used oat flour since I'm in the middle of a 12 day detox with my Juice Plus+ group. For the kids, I tossed in a few of our favorite allergy friendly Enjoy Life Chocolate Chips as a treat instead of syrup. We always double the recipe on this because we usually have a grandparent or two pop in for breakfast when we're making these. Even if they don't, the leftovers reheat nicely the next morning for the kiddos. Either way they always get eaten!
Ingredients
1c whole wheat flour or oat flour or this GF recipe from A Little Insanity
2tsp baking powder
1/2tsp baking soda
1 tbsp sugar (I use coconut palm sugar or organic FL cane sugar)
1 tbsp water (up to 1/4c ONLY if you're using the flour recipe from A Little Insanity)
1 tbsp avocado oil (or canola, vegetable)
1 tbsp applesauce
1/2t vanilla extract or
Extra oil or coconut oil or Earth Balance Vegan Butter for greasing the pan or griddle
Mix the orange juice, water, sugar, oil, applesauce and vanilla extract well in one bowl. Mix the flour, baking powder, and baking soda in a second bowl. Slowly add wet to dry and stir well. If you're using the oat flour it will appear very runny at first, so let the bowl sit for about five minutes after mixing so it will thicken. (Wheat flour and the flour from A Little Insanity do not need to sit, cook immediately.) Cook on a greased griddle set to medium to medium-low heat, then flip gently when ready. You don't want to cook them too fast and hot, or the middle will be too soft. After I flip them, I like to press down on top with my spatula to evenly spread the batter for the second side. These can puff up a bit when you cook them.
Serve warm, with a drizzle of all natural, pure maple syrup or local honey. Enjoy! If you're planning on making any to freeze for the future, I recommend stacking them with layers of parchment between them.
